Well, I’ve been back in Ohio for 6 days now and am just now posting, so very sorry!
I have cooked some but not a lot for sure! This past week we had a soup that comes in the freezer section of your store and it is fabulous, it is Bertonilla Tomato Soup, it has spinach in it and I do not even like cooked spinach but this soup makes it worth eating the cooked spinach. I served the soup with a salad and homemade bread. Great meal and super easy!!!
Another night we had homemade hamburgers, homemade oven fries! We love my hamburgers and so easy to make. I use 1 pound of ground beef, 2 eggs, 2/3 cup evaporated milk, dried minced onions, salt, pepper, 1/3 cup parmesan cheese and 1/2 cup of bread crumbs (or enough bread crumbs to hold the meat together but not dry it out). I mix all of this together with my hands but you can use a spoon. Make sure the burgers are very moist. I make them into patties and then put in the freezer for a while so they don’t fall apart when Arlon puts them on the grill. Very moist burgers!!! Oven Fries, we slice potatoes and put them in a bowl that we have mixed 2 tbsp canola oil and 1 tbsp water, make sure potatoes are coated well. Spray a large baking sheet and put potatoes in 1 layer on the sheet, use more baking sheets if you need to so you have just 1 layer of potatoes. Bake 40 minutes, the last 5 minutes or so turn to Broil to brown the top side of the potatoes. Salt and pepper and then serve.
Tonight we had Sausage Po Boys, Baked Beans, Corn on the Cob, and Baked Potatoes. Super good meal. Arlon grills the sausage and we put it on a Sub Roll with lots of BBQ Sauce on it. Bake Beans I use Bush’s Baked Beans and add BBQ sauce and brown sugar.
